The climate and the "terroir" of the area gives to the albariño grape a great quality, it means that the result is an albariño wine with a great national and international prestige.

The harvest is made between half september and half october. From the picking up in Adega Eidos we take care every time the elaboration process to make the best wine.

During the harvest we make a first selection over the bunches taking out the damage ones, and taking immediately the right bunches into the winery. After received them in the winery, weighted and identified the plots, immediately we made a grape analysis to check the quality of the grapes.

Then we start the elaboration process, first we made a second selection of the grapes on the sorting table, taking out damage bunches or bunches not are on the right ripeness or right quality conditions, after we start the destemming, crushing and cold soak process for making then a low pressure pressing.

The fermentation is the process where the sugars from the must become in alcohol. We make the fermentation in inox tanks at a controlled temperature with the objective of preserving all the organoleptic features of the wines.
